Description
The Mieludo Method is an artisanal drying process, patented by Café Crem.
This method consists of allowing the coffee beans, once pulped, to soak in their own natural honey, called mucilage. Mucilage is a gelatinous layer found between the pulp and the parchment.
Normally this honey is removed quickly to prevent fermentation, but at Café Crem we have learned to live with it for a certain time so that the residue slowly penetrates the bean by capillary means.
Once the capillary reaction has occurred, by which the sugars pass through the parchment and reach the coffee bean, we dry it using our unique method.
In this way we obtain a unique nuance of sweet flavour that you can only enjoy with this product.
The Mieludo Method comes entirely from Finca Los Lirios, owned by Café Crem. Therefore, it is not only a single-origin coffee, but a single-farm coffee, from perfectly identified and traced lots.
The score awarded to this Mieludo coffee harvest by the I.E. del Café was 87, so it can be considered a Specialty Coffee.
