Description
The Honeyed Method is an artisanal drying process patented by Café Crem. This method consists of allowing the coffee beans, once pulped, to be impregnated with their own natural honey, called mucilage. The mucilage is a gelatinous layer found between the pulp and the parchment. Normally this honey is removed quickly to avoid fermentation, but at Café Crem we have learned to live with it for a certain time so that the residue slowly penetrates the bean by capillary means. Once the capillary reaction has occurred, by which the sugars pass through the parchment and reach the coffee bean, we dry it according to our unique method. In this way we obtain a unique, sweet flavour that you can only enjoy with this product. The Honeyed Method comes entirely from Finca Los Lirios, owned by Café Crem. Therefore, it is not only a single-origin coffee, but a single-farm coffee, from perfectly identified and traced batches. The score given to this Mieludo coffee harvest by the I.E.del Café was 87, so it can be considered a Specialty Coffee.
