The Honeyed Method is an artisanal drying process patented by Caf\u00e9 Crem. This method consists of allowing the coffee beans, once pulped, to be impregnated with their own natural honey, called mucilage. The mucilage is a gelatinous layer found between the pulp and the parchment. Normally this honey is removed quickly to avoid fermentation, but at Caf\u00e9 Crem we have learned to live with it for a certain time so that the residue slowly penetrates the bean by capillary means. Once the capillary reaction has occurred, by which the sugars pass through the parchment and reach the coffee bean, we dry it according to our unique method. In this way we obtain a unique, sweet flavour that you can only enjoy with this product. The Honeyed Method comes entirely from Finca Los Lirios, owned by Caf\u00e9 Crem. Therefore, it is not only a single-origin coffee, but a single-farm coffee, from perfectly identified and traced batches.
