Farms located in the province of Medan, to the north of the Indonesian island of Sumatra, in the nearness of the Danau Toba lake , the largest volcanic lake of the world.
They are located at an altitude of 500-900 meters above sea level, gently placed under the shade of autochthonous trees of the zone.
It is characterized for being a zone of fairly small farms grouped in a kind of cooperative.
It possesses a climate with well-marked stations, with temperatures that range between the 20 and 30 degrees. The rainfall is quite high, close to 2.000 mm / year, which provokes fairly flowerings of the plant of the coffee.
The harvesting is carried out between May and July. In these farms the harvesting is not selective, that is to say, we only carry out one pass, while leaving the fruit ripen very much in the bush, to diminish the quantity of fruits that are not their optimum ripeness.
The coffee is processed by the dry way, which means that the grain is sun-dried, approximately for 42 hours of sun (6 days). Once dried, it is moved to the province of Lampung, to the south of the island. There, the coffee is threshed, with a temperature lower than 50 degrees, in order to guarantee the preservation of the aromas. Later it is classified for size, to facilitate the selection by gravity.
